Customer Choice: Multiple Ingredients

You may have menu items that require customers to decide on options.  For example, you may give customers a choice of baked potato, French fries, or rice with their steak.  Or, you may give customers a choice of fifteen topping options for a pizza.  Keeping track of all of these options may seem complicated, but CostGuard can handle these situations easily.  Use this method for:

 

 

Before you can enter the information in CostGuard, collect some data on your customer choices.  You can use information from Guest Checks or POS system, or a plate waste analysis.  You need to find out the percentage served for each choice.

To manage these options:

1.       Create each option as a recipe serving one portion.

Using pizza as an example, if you use ½ cup of pepperoni per pizza, create a serving recipe  with ½-cup pepperoni as the ingredient.  Name the recipe “Pepperoni for pizza”.   Make sure each option has its own recipe.

2.       Create a new recipe called “Options/Sides/Average,” serving one portion.  Use your options from step 1 as the ingredients, as well as any inventory items that are part of the choice such as the crust for the pizza.   

For the quantity, put in a decimal amount that represents the popularity of the side.  The total of all of the options should equal one.  So, if 40% of your pizzas have pepperoni as an ingredient, the quantity would be .4 for the pepperoni for pizza recipe when you use it as an ingredient.

3.       Use the Options/Sides/Average recipe as an ingredient in other recipes. 

Because the options are proportional, every time you sell the main dish, CostGuard will deplete the sides.  When you sell 100 pizzas, the sales module will deplete 20 cups of pepperoni from Inventory, or 40 orders multiplied by ½ cup of pepperoni.
