The Nutrition module allows you associate multiple nutrition ‘facts’ with the same item. This is useful if the item is used fresh or cooked in different recipes. Here’s an example using beef, with both raw and cooked nutrient codes.

Associate both raw and cooked nutrient codes in the inventory item and add the correct shrinkage factor:
